Elders Nutrition Head Cook
at Cocopah Indian Tribe
Under the immediate supervision of the Nutrition Program Coordinator, the Cook will prepare meals for the Home Delivered Meals program. Prepares meals from nutritionally approved 4 cycle seasonal menu rotation and all aspects; including supplies inventory, meal planning, preparation, assigned kitchen areas and equipment in a clean and orderly condition. Observance to nutritional guidelines compliance, delivery preparation, preparation for the following day.
Essential Duties and Responsibilities:
Cooks and prepares meals that comply with all dietary and nutritional guidelines as specified by the Inter-Tribal Council of Arizona (ITCA) and the Health & Human Services (HHS) department nutritionist.
Ensures the timely and quality preparation and serving of hot meals 5 days per week excluding Holidays.
Ensures the highest standards for meal preparation and presentation to the seniors.
Prepares specialty “Renal & Dialysis Friendly” meals and meals for others with allergy considerations.
Ensures that all delivered meals and stored food are at appropriate temperatures.
Analyze recipes to assign prices to menu items, based on food, labor, and overhead costs.
Instruct other workers in the preparation, cooking, garnishing and presentation of food.
Estimates amounts and cost of required food and ingredients for the weekly meals.
Identifies ways and methods to cook efficiently in order to maximize efficient utilization of food and supplies.
Actively participates in the department’s safety and OSHA compliance efforts to ensure a safe workplace.
Remains constantly vigilant to workplace safety and providing a clean and sanitary work environment. Demonstrates new cooking techniques and equipment to staff.
Provides monthly menu to coordinator and to our Cocopah newsletter.
Participates in food/meal related grant compliance matters.
May on occasion be the contact person when the Coordinator is out of the office and a backup transportation driver for meal delivery route.
Must understand and comply with departmental internal control and regulations.
Other duties may be assigned.
Knowledge, Skills and Abilities
Some knowledge of advance food preparation techniques preferred.
Knowledge of grill, fryer, slicer and other kitchen equipment.
Applicant must be in good physical health as this position requires lifting of heavy objects.
Ability to speak, read and write English fluently.
Must have knowledge food safety standards to ensure the safety of guests.
Education and/or Experience
High School Diploma or GED prefers.
Six months food preparation experience.
Must be able to obtain health card.
Successful candidates will be subject to pre-employment and on-going random drug/alcohol testing.
