Job Description


Assists the Executive Pastry Chef in the overall pastry direction, coordination, production, and evaluation of the pastries/desserts for banquets and all other F&B outlets.

Primary Responsibilities

    -Assists Pastry Chef with reviewing, developing and implementing seasonal and yearly menus for all food outlets and banquet operations. Analyzes recipes, determines food, labor and overhead costs and assigns prices to menu items.
    -Assists Pastry Chef with food organization, production and execution of all events and catering functions
    -In the absence of the Pastry Chef, collaborates with other culinary department heads to monitor normal responsibilities of kitchen operations.
    -Observes pastry cooks engaged in preparing, portioning and garnishing desserts to ensure that methods of cooking, garnishing and portion sizes meet standards.
    -Estimates food consumption and purchases or requisitions food products and kitchen supplies.
    -Tests cooked foods by tasting and smelling them, while monitoring feedback from guests.
    - Monitors and ensures compliance with all sanitation, ServSafe and safety requirements.
    -Ensures that food costs are controlled through a variety of techniques: wastage control, stock rotation, menu planning, recipe cards etc.



    -High School Diploma

    -Two year pastry degree from an accredited institution or 4 year pastry apprenticeship preferred
    -3+ years of pastry experience in a professional pastry kitchen of a 4 Diamond or 4 Star Hotel, restaurant or high end patisserie
    -Previous supervisory experience
    -Must obtain valid ServSafe certification

Skills & Abilities

    -Excellent time management and organizational skills
    -Ability to calculate figures and amounts, such as recipe yields, serving size, weight and temperature conversion
    -Ability to pay close attention to detail
    -Excellent verbal communication skills
    -Ability to work a flexible schedule, including nights, weekends and holidays

Physical Requirements

    -Ability to stand and walk for extended periods of time, talk, hear, listen, smell, reach, grasp, bend, and perform repetitive motions
    -Ability to push, pull, lift, carry or otherwise move up to 20 lbs
    -Ability to work a flexible schedule, including nights, weekends and holidays
